Hare Muttar Ki Puri

Crispy puris stuffed with green peas are superbly flavoured and simply divine. You will enjoy these puris with Aloo ki Subji.


  • For the dough
  • 500 gms plain flour (maida)
  • 2 tbsp curds (dahi)
  • 1 tsp levelled, baking powder
  • 1 tbsp ghee or margarine or butter
  • 1 tsp salt

To be mixed into a stuffing

  • 1 1/2 cups boiled green peas
  • 5 green chillies, finely chopped
  • 1 tsp cumin seeds (jeera)
  • 1/2 tsp lemon juice
  • 1 tsp plain flour (maida)
  • 1 tsp ghee
  • Salt to taste
  • Ghee or refined oil for deep-frying


For the dough

  • Sieve the flour very well.
  • Add the curds, baking powder, ghee and salt and make a soft dough by adding some more warm water.
  • Knead the dough for at least 6 to 7 minutes.
  • Keep the dough under a wet cloth for at least 1 hour.
  • Knead for 1 minute.
  • Divide the dough into 20 balls and flatten a little.

For the stuffing

  • Mash the green peas and add the green chillies.
  • Heat the ghee, add the cumin seeds and fry until they crackle.
  • Add the mashed green peas, chilles, lemon juice and salt and cook for a few minutes.
  • Sprinkle the flour and cook for 2 to 3 minutes until the mixture becomes dry.

How to proceed:

  • Roll out each ball dough into a small round. Put a teaspoon of the stuffing in the centre and close it.
  • Roll out thinly with the help of a little flour.
  • Deep fry in ghee.
  • Serve hot.
