Spinach Feta Samosa

Samosa stuffed with spinach and feta cheese and baked.

The feta cheese melts into the spinach leaving you with a mellow tasting samosa complemented by tomato ketchup or green chutney. You can include more chili to your desired taste and enjoy every bite!

Spinach leaves, Crumbled feta cheese

Spinach leaves blanched and chopped 2 medium
Crumbled feta cheese 1/2 cup
Samosa pattis 8-10
Butter 2 tablespoons
Garlic chopped 1 tablespoon
Onion chopped 1 medium
Sprigs of thyme 3-4
Red chilli flakes 1 teaspoon
Salt to taste
Raisins 2 tablespoons
Cashewnuts chopped 2 tablespoons
Refined flour (maida) 2 tablespoons


Step 1
Preheat oven to 180º C.

Step 2
Heat butter in a non-stick pan, add garlic and onion and saute till onion turns translucent.

Step 3
Add spinach leaves and saute for a minute. Add thyme, red chilli flakes and salt, mix well and saute for a minute.

Step 4
Add raisins and cashewnuts and mix well. Remove from heat and cool down to room temperature. Add feta cheese and mix well.

Step 5
Take the flour in a bowl, add sufficient water and mix well into a thick paste.

Step 6
Place each samosa patti on the worktop and rub it lightly with the flour paste. Place a small portion of the spinach-cheese mixture at one end and fold into a triangular samosa. Seal the edges by applying the flour paste and then pressing gently.

Step 7
Place samosas on a baking tray, keep the tray in the preheated oven and bake for eight to ten minutes, turning them a few times.

Step 8
Serve hot with tomato ketchup or green chutney.
